. . . Cookie Time Tuesday - - Pastel Tea Cookies . . .

I don't normally like to make a cut out cookie with royal icing but these turned out brilliantly and the icing was actually very good.  I got the recipe from a Taste Of Home Easter Cookbook that was at the grocery store checkout.  I was a bit skeptical of the recipe but they are beyond delicious!  I think the meringue powder was what the icing so nice to work with and left a beautiful "shine" on the cookie.  These would make the perfect gift for someone because you can stack them without them getting icing smeared all over everything.  I really have to say this is a keeper!  I love that you can do these for any occasion and make them festive depending on the coloring you add to the icing.  
Pastel Tea Cookies
• 
Print Recipe HERE
• Gather ingredients
• Mix butter and sugar until fluffy
• Add egg and vanilla and combine
• Mix in the flour and salt.  Chill dough for 1 to 2 hours

  c• Roll chilled dough out to 1/8 inch thickness and cut out cookies with desired shapes.  
• Bake at 350 degrees for 8 to 10 minutes

**If you don't have a pastry cloth and sock for your rolling pin it is a great purchase to make!  I promise you will love it and be impressed

• To make the royal icing you will need to have powdered sugar and meringue powder and a few teaspoons of water.   
**My meringue powder was by Wilton & I purchased it from Michael's
• Divide your icing up and color each bowl to the color of your choice

Ice the cookies and let the icing set until hardened.  Package as you would like for gifts or for platter them for serving.
