Tater Tot Casserole

As my loyal followers know, I love cooking and being in my kitchen trying out new recipes.  I have to say that this is a very elementary recipe but sooo good.  Everytime I make it I feel like I'm letting my son and husband down so I always apologize and they both laugh and say that it makes them perfectly happy to have it and it doesn't last long between the two of them.  Since they like it so much and I personally think it's a pretty yummy meal I thought I'd share.  I first had this meal when i was younger and our next door neighbors, that were like grandparents to my sister and I, made this for dinner one night for the two of us.

TATER TOT CASSEROLE

1 pound Ground Beef
1 Can of Cream of Mushroom Soup
1 Bag of Frozen Tater Tots
1 Cup of Cheddar Cheese
Garlic Powder to taste
Salt/Pepper to taste

Brown your ground beef in a skillet and then drain the grease off.  Dump the browned beef in a medium bowl and add the cream of mushroom soup and spices if you want to.  Add mixture to a 13x9 casserole dish that has been sprayed with cooking spray.  Top the ground beef/soup mixture with cheddar cheese (I say 1 Cup but if you want to pile on the cheese then go for it).  Once the cheese is on the meat mixture top the entire casserole with the frozen tater tots.  I line them up in a perfect line going across the casserole dish.  I usually have a few left so I just add them on top so they get baked up too.  Bake in a 400 degree oven for about 30 minutes but watch the tater tots so they don't get too brown--you may have to top with foil if they start to burn.

  2. Kat, as I was posting the recipe and photos I was thinking how badly I could go for some of that casserole. It made me hungry :-)
