I love Cashews! They are my absolute favorite nut--my husband hates when he buys cans of mixed nuts and I pick every last Cashew out of the can. I also am a huge fan of anything Toffee! You may remember when I made Toffee Cookies that were like the Fresh Market has and those babies were Yummy!!

When I was cruising Pinterest and some Linky Parties I kept seeing this recipe pop up and had to check it out. One look at the photo of Galley Kitchen's Toffee Cashew Cookie and I knew I would be making them ASAP for Cookie Time Tuesday.

For some reason mine really flattened out when they were baked. This is one thing that usually is the deciding factor as to whether or not I would make a cookie again. I really wish my Toffee Cashew Cookies would have had more "fluff" to them but they are so beyond delicious that I will make them again for sure.
My son is extremely picky when it comes to cookies and he wanted to eat them one after another--good thing I'm a mean mom and put a stop to that pretty quick. I guess when they have his stamp of approval then I know it's a keeper.
• Gather ingredients
• Mix butter and sugars together until fluffy
• Add eggs one at a time until combined
• Add vanilla and mix well
• Dissolve your baking soda in the warm water and add to batter
• Add flour and salt
• Once dough is combined add cashews and toffee bits

•Drop by spoonfuls onto a silpat or parchment paper lined baking sheet
• Bake for 10 minutes (Mine were done at 9 minutes)

I have heard that the reason cookies get flat and spready is because the batter is to soft (really the butter) so you could try chilling the batter for an hour or so after you make the dough. I have never made a cookie where you put the soda in warm water before, so that could be part of the difference as well. If you like the way it tastes who cares, right?
