. . . Cookie Time Tuesday-Semi Homemade Rolo Snickerdoodles . . .

My son and I love Rolos so when I recently discovered the Rolo Minis I knew I wanted to come up with a cookie using them.  They are already unwrapped and they aren't too big which is perfect for baking.  I decided to try a semi homemade cookie because I was running short on time this past weekend since it was busy with my birthday so I went with store bought sugar cookie dough and a bag of Rolo Minis.  Sadly I still had to use some of the larger Rolos (it's only sad because it's a pain to unwrap them all) because my son and I were snacking on the Rolo Minis while making the cookies...what a good mom I am to let him snack on Rolos right before dinner right?  


 I used two packages of Sugar Cookie dough and 1 full partially full bag of Rolo Minis and some cinnamon and sugar and that was it!  Can't get much easier than this.  These cookies aren't the prettiest cookies because they do get flat after they bake but they make up for it in taste!

You will need:
Store Bought Sugar Cookie Dough 
OR your favorite homemade cookie dough

1 Bag of Rolo Minis (you could use the regular sized too)

Cinnamon and Sugar mixture

rolO Snickerdoodles

• Gather your ingredients (so easy since it's all store bought except the cinnamon and sugar)
• Roll dough by the tablespoonfuls and then flatten out and place a Rolo Mini in the center of your dough
• Pull the edges of the dough up around the Rolo Mini and roll into a ball shape then toss in the cinnamon and sugar
• Place on a Silpat or Parchment Paper lined baking sheet

• Bake in a 350 degree oven for 10 to 12 minutes then remove to wire racks to cool.  These were fantastic warm because the caramel and chocolate was still gooey!
