. . . Cookie Time Tuesday-- Peanut Butter Secrets . . .

"Hey guys! I'm Christy from The Girl Who Ate Everything and I love, love, love to eat! Peanut butter and chocolate have always been a favorite of mine. I've been guilty of eating spoonfuls of peanut butter with chocolate chips sprinkled on top a time or two. These cookies are a more elegant way of getting your chocolate and peanut butter fix. And if you don't get your fix from these babies, there is no helping you!"

 
You are going to need a whole lot of mini peanut butter cups for these. I went with the one for me, one for the cookies approach.
 
 
Just wrap a little peanut butter cookie dough around each one.
And, as if we didn't already have enough peanut butter and chocolate, you dip the cookies in melted peanut butter and chocolate. Amen!

Peanut Butter Secrets

Ingredients:
Cookie:
1 cup butter flavored shortening
3/4 cup firmly packed brown sugar
1/2 cup granulated sugar
1/2 cup creamy peanut butter
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
40 to 45 chocolate-covered miniature peanut butter cups

 Glaze:
1 teaspoon butter flavored shortening
1 cup semi-sweet chocolate chips
2 tablespoons creamy peanut butter

Preheat oven to 375ºF. Coat baking sheets lightly with no-stick cooking spray. Combine shortening, brown sugar, granulated sugar and peanut butter in bowl of electric mixer; beat at medium speed until well blended. Beat in egg and vanilla. Combine flour, baking soda and salt in medium bowl. Mix into shortening mixture at low speed until just blended. Form rounded teaspoonfuls of dough around each peanut butter cup. Enclose entirely. Place 2 inches apart on baking sheet. Bake cookies for 7-9 minutes, or until cookies are just slightly browned. Remove immediately to cooling rack. Do not over bake!

Combine shortening, chocolate chips and peanut butter in microwave-safe measuring cup. Microwave on 1 minute. Stir. Repeat until smooth. Dip cookie tops in chocolate. Let stand until chocolate is set.

  3. Wow. These look amazing. I may have to run to the store and get the ingredients to make these today. Love PB and chocolate. And I think you made the right choice with the glaze. You can never have too much chocolate and peanut butter.
