. . . Cookie Time Tuesday-Jell-O Cookies . . .


Well, it’s Cookie Time Tuesday again...

You will enjoy making these delicious cookies!  When I saw these cookies first on Pinterest and then on Just Helen I knew they had to be an upcoming recipe for Cookie Time Tuesday.

You can use any flavor Jell-O but I like Lime, Orange, Raspberry and Lemon.  It will make a prettier cookie to add some food coloring to the batter as well.  Otherwise the cookies are a fairly pale color.

 You will need:
1/2 cup shortening
1/4 cup butter, softened
1/2 cup granulated sugar
4- 3oz. packages of Jell-O ( I used raspberry, orange, lemon and lime flavors)
2 eggs
1 teaspoon vanilla
2 1/2 cups flour
1 teaspoon baking powder
1 teaspoon salt
Food Coloring, optional
 
 
 • Gather your ingredients
• Choose the flavors of Jell-O that you want to use in your cookies
• Beat butter, shortening and sugar until fluffy
• Beat in eggs and vanilla until well blended

 • Mix dry ingredients and then beat into butter mixture
• Divide batter into 4 bowls (or however many Jell-O flavors you are using)
• Add desired amount of food coloring and powdered Jell-O into the divided batter and mix well until all is combined.
• Roll your dough into 1 inch balls and toss in powdered Jell-O in matching flavor to the color of your cookie dough.  You can mix granulated sugar in with powdered Jell-O to make a "chunkier" look to the finished cookie

• Place your balls on a silpat or parchment paper lined baking sheet.  If you want your parchment paper to lay flat wet your pan first then lay out the parchment paper.
• Flatten the balls with a flat bottomed glass or bowl
• Flattened Cookies are ready to bake at 400 Degrees for 6 to 8 minutes
• Cookies will puff up nicely.  Move to cooling racks
