. . . Cookie Time Tuesday--Peanut Butter Sandwich Cookies . . .

I am the only one in my house that loves peanut butter so I'm not sure it was smart for me to make these amazing peanut butter sandwich cookies.  I promise I will only eat one two at a time.  They are so soft and yummy!!

You will need:
For the Cookies:
3 cups flour
2 teaspoons baking soda
1/2 teaspoon salt
1 cup butter flavored Crisco
1 cup creamy peanut butter
1 cup sugar,  plus 1/3 cup for rolling dough
1 cup packed light brown sugar
1 teaspoon vanilla
3 eggs

For the Peanut Butter Filling:
1 cup creamy peanut butter
1/2 cup unsalted butter, softened
4 cups powdered sugar
2 teaspoons vanilla
3-4 tablespoons milk

 • Gather ingredients
• Mix sugars, peanut butter and shortening until fluffy
• Add vanilla and eggs one at a time
• Add dry ingredients and blend well

 • Roll dough into small balls and roll in sugar
• Place rolled dough on cookie sheet about 2 inches apart
• Flatten cookies into a criss cross pattern using the tines of a fork
• Bake at 375 for 6 to 8 minutes

 • For the filling you need to gather your ingredients
• Mix everything but the milk together until well combined
• Add milk to get the right consistency
• Place a spoonful of filling on the bottom of one cookie then sandwich 
the cookie with another of the same size.
