. . . Cookie Time Tuesday--Lemon Crumb Bars . . .

I L♥VE a good Lemon Bar and my family has an outstanding recipe for them, but when I was flipping through a cookbook and saw this unique twist on Lemon Bars I had to give it a try.  The recipe for Lemon Crumb Bars calls for Saltine Crackers--what?  I know it sounds weird but it totally works.  I don't even have a pretty picture of the finished product because these bars disappeared before my eyes the minute I set them out.  They are so good!

You will need:
1 Package lemon or yellow cake mix (I used lemon)
½ Cup Butter or Margarine, softened
1 Egg
2 Cups finely crushed Saltine Crackers Crumbs
3 Egg yolks
1 can Sweetened Condensed Milk (NOT evaporated milk)
½ Cup Lemon Juice

• Gather ingredients
Combine cake mix, butter and 1 egg-mix well
• Add cracker crumbs
• Pour onto a greased or silpat lined cookie sheet

 • Press crumb mixture into cookie sheet and bake 
• Meanwhile mix the egg yolks, lemon juice and sweetened condensed milk
• Pour mixture over baked crust
• Top with reserved crumbs and bake

  1. I love, love, love lemon bars. Weird, random fact: but I worked a few years as a counselor for at a women's prison and there was a culinary program for them to participare in. This gals made the best darn lemon bars ever! You brought back those lovely prison memories...haha Bet you never thought someone would say that you, huh?
