. . . Cookie Time Tuesday-M&M Cookies . . .

I know at first glance you may not think this weeks cookie is very exciting but everyone loves a great basic M&M Cookie and it can be hard to find one that doesn't just flatten out when you bake them.  This recipe came from Baked By Rachel and I am so glad that I found it!  You will love the bit of crunch on the outside and the soft and chewy inside, it also is great to have the M&Ms and the chocolate chips.  This cookie was made for my son's 2nd grade class party and I had to find a basic cookie that would draw the kids in and this one exceeded my expectations. We even made a few into yummy ice cream sandwiches at home.

You will need:
1/2 Cup unsalted butter, softened
1/2 Cup sugar
1/2 Cup brown sugar
1/2 tsp vanilla
1 egg
1 3/4 Cups flour
1 3/4 tsp baking powder
1/2 tsp salt
3/4 Cup chocolate chips
3/4 Cup M&Ms



• Gather ingredients--I made a triple recipe since I had to send it in to my son's class 
• Beat sugars and butters
• Add eggs and vanilla
• Add dry ingredients
• Add Chocolate chips and M&Ms
• Mix by hand and really go for it--I almost kneaded it so I could get all the chips and M&Ms to mash into the dough
• Scoop by spoonfuls onto a parchment lined or Silpat lined baking mat
• Leave plenty of space between each because they do spread a bit
• Bake according to recipe and the size of cookie you want
• Remove from oven and let cool for a minute on cookie sheet
• Transfer to wire racks until completely cool
