. . . Cookie Time Tuesday-Toffee Chip Snickerdoodles . . .

Believe it or not I have never made snickerdoodle cookies.  I like them but I don't love them so I've never been motivated to make them--until now!  I love toffee chips so when I came across this recipe I knew I had to make it.  It is a really good cookie!  I think you will enjoy them.  They are nice and soft and don't flatten after you bake them.

Print recipe HERE

You will need:
1 cup (2 sticks) butter, softened
1 cup plus 3 tablespoons granulated sugar, divided
2 eggs
2-1/4 cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
1-1/3 cups (8-ounce package) toffee bits
1 teaspoon ground cinnamon

• Gather ingredients
• Combine sugar and butter until fluffy
• Add eggs and mix well
• Add flour mixture to butter/sugar mixture and mix well

• Add toffee chips
• Mix in the toffee chips until well combined
• Mix up cinnamon and sugar in a small bowl
• After cookie is rolled toss in cinnamon sugar

• Place rolled cookies on a Silpat or Parchment Paper lined cookie sheet
• Bake for about 9 to 11 minutes
• After cooling on the cookie sheet for about 1 minute transfer to a wire cooling rack
• Mmm Mmm Good!

  1. As if snickerdoodles aren't good enough on their own, you have to add toffee! Sounds SO good!
