Cookie Time Tuesday-Ice Cream Sandwich Cookies

My son looks forward to Cookie Time Tuesday each and every week.  He had a special request for today's cookie--Ice Cream Sandwich Cookies.  I made them over the weekend and they were a huge hit with him and his little friend that was here and my husband.  This was a super fun and easy recipe to make and a real treat for kids.  The cookies were very soft and chewy and even frozen they didn't get too hard to be able to eat them straight from the freezer.

You Will Need:

2 1/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter, softened
3/4 cup granulated sugar
3/4 cup light brown sugar
1 teaspoon vanilla extract
1 large egg
Plain chocolate covered candies for cookies, I used mini M&Ms
Vanilla or Chocolate Ice Cream
Sprinkles, for decorating, optional

Gather your ingredients to make the cookies

Cream butter and sugars together

Add vanilla and egg to sugar mixture

Add flour mixture and butter mixture together to get this dough

Drop by tablespoonfuls onto parchment lined cookie sheets.
I sprayed my palm with cooking spray and flattened each cookie out

Press M&Ms into the top of each flattened cookie

Bake in oven for about 13 minutes until slightly golden

Let cool on baking sheet for about 2 minutes then transfer to cool completely on a wire baking rack

Thaw ice cream for about 10 to 15 minutes then peel the box away from the block of ice cream

Slice ice cream as if it was a piece of cake--about 1 inch thick. 
Then take a circle cookie cutter and cut out a circle of your ice cream.

I saved the extra ice cream and made a "McFlurry" out of the leftover M&Ms and ice cream

Place the ice cream "cirlce" on the bottom of one cookie than top with another cookie. 
I pressed down slightly to "seal" them together.  I then bagged them in individual
ziploc bags to when someone wanted to eat one they can just grab one at a time.

They were a big hit in our house!

  3. Anytime I'm at a ballpark, racetrack, carnival, etc. I "treat" myself to the cookie ice cream sandwich! Now I wait no longer, treat time is all the time! :) I am so glad you shared this! You make it look very doable! (I've always been intimidated by homemade ice cream sandwiches!) :)
