Quick Oven Beef Stew Recipe

My husband loves a hearty soup or stew so tonight I'm making Beef Stew and it's such an easy and quick recipe.

You will need:
1 Cup Celery
1 1/4 Cups Carrots
1/2 Onion
5 Potatoes
1 Cup Mushrooms
2 1/2 Pounds Stew Meat
1 Packet Lipton Onion Soup (I use Beefy Onion)
1 to 2 Cups Beef broth or red wine
1 Tbls Tapioca Pudding granules
1/4 C Flour

Gather your ingredients

Sprinkle 1/4 Cup flour over stew beef and mix.  Bake in a 400 degree oven for 20 minutes.  Stir halfway through to make sure the meat is all covered in flour.

Chop your carrots, celery, onion, potatoes, and mushrooms

Remove beef from oven-should look like this above

Add all your chopped ingredients except for the mushrooms, beef broth (or wine), tapioca and onion soup

Bake covered for several hours in a 350 degree oven.  About 15 minutes before you are ready to eat the stew add in the mushrooms. *You could adapt this recipe to use the crock pot

Serve with warm bread and you have an amazing meal

  2. Great question! The tapioca thickens it so it's more of a gravy consistency versus a liquidy soup.
