Chicken Enchiladas

I used to think that Enchiladas were a difficult meal to prepare and then I tried them a couple years ago and realized how simple they are!  I wanted to share my recipe.  For those that think they sound hard give it a try and you'll be surprised at what a wonderful meal you get out of such an easy recipe.

Chicken Enchiladas

Shredded Chicken (About 1 to 2 cups)
10 Tortillas (I use white burrito size)
2 Cups Shredded Cheddar Cheese
1 Large can of Red enchilada sauce or 2 small cans
1/2 Cup Half and Half
1 Bag of frozen onions and peppers
Preheat oven to 350 degrees

Brown frozen onions and peppers in a skillet coated with cooking spray or olive oil. 
Saute just until brown.

Pour enchilada sauce in a small bowl.  Add Half and Half, stir to combine.

Warm your tortillas in microwave for about 30 seconds or bring to room temperature.

Combine chicken, 1 1/2 cups cheese and browned onions and peppers in a large bowl.

Cover tortilla shell with about 1 to 2 Tablespoons of enchilada sauce and then put 1/4 Cup filling on top and roll up and place in a baking dish coated with cooking spray, fold side down.

Line tortillas up in the pan until full.

Pour remaining sauce over all the enchiladas.

Cover top with remaining cheese.

Ready to bake in a 350 degree oven for 30 minutes or until bubbly

Serve with mexican rice, sour cream, shredded lettuce and some enchilada sauce and you have a YUMMY meal in no time at all!

  1. looks delicious!! I'll definitely have to try this recipe out - I always thought enchiladas looked too complicated to make, too! :)
