Chocolate Chip Meringue Cookies

Chocolate Chip Meringue Cookies
3 Egg Whites
1/8 tsp cream of tartar
1/2 tsp vanilla extract or pur vanilla
2/3 Cup white sugar
1 Tbls cocoa powder
1/3 Cup mini chocolate chips
•Preheat the oven to 200 degrees
•Bring eggs to room temperature
•Beat egg whites, cream of tartar and vanilla with an
electric mixer until soft peaks form.
•Slowly add sugar and beat until stiff peaks form and mixture has a "glossy" look
•Fold in cocoa powder and mini chips (Don't use mixer)
•Drop by tablespoonfuls onto parchment paper lined cookie sheets.
•Bake for 1.5 to 2 hours until slightly browned. Turn oven off and let cool inside the oven.

If you can eat only one you have more will power than I do! :-)

  1. I can't! I made some for Mother's Day and ate about 10! Firt time making/eating them, and I LOVED them!

  2. This is one you just can't stay away from. A great chocolate treat with little guilt. At least I keep telling myself that as I pop just one more in my mouth!
