You are going to want to
RUN not walk to the closest grocery store to pick up TWO ingredients to make
this amazingly yummy dessert. How simple
can you get--just 2 ingredients to achieve a pan full of Lemon Bars that won't
break the calorie bank!
I love Lemon Bars so when I came across this recipe on Practically Living I couldn't wait to give it a try. All you need is a can of Lemon Pie Filling and an Angel Food Cake Mix (and powdered sugar for the top if you want). These end up with more of an Angel Food Cake texture but really a strong lemon flavor. I'm sure you could bump up the flavor even more by adding a little lemon zest. These are now going to be a must have in our house.
You will need:
1 Can of Lemon Pie Filling
1 Box of Angel Food Cake
Powdered Sugar for dusting if you would like (It makes them look pretty)
Mix the lemon pie filling and powdered cake mix together by hand until combined but don't over mix. Pour batter into a lightly greased 9x13 inch pan and bake in a preheated 350 degree oven for 20 to 25 minutes. I set my timer for 20 minutes and they were just about completely baked through so I added 3 more minutes. I would recommend setting the timer for 20 minutes and then adding time as needed if they aren't baked through. Sprinkle a little powdered sugar on the top and let them cool.
• Gather your 2 ingredients
• Mix the powdered cake mix and lemon pie filling together until just combined
• Your combined mixture will be very fluffy
• Pour your batter into a lightly greased 9x13 inch baking dish
• Bake in a preheated 350 degree oven for about 20 to 25 minutes
• While the bars are cooling sprinkle them with powdered sugar. This is optional but I would recommend it for the "beauty" factor alone.
• Cool completely then cut into squares and serve
• The texture is very similar to an Angel Food Cake but has a great lemon flavor without all the fat and calories of regular lemon bars.

It is nice having something sweet around the house that isn't going to totally break the bank when it comes to calories (of course I have to limit myself on the quantity I eat haha)
