I discovered the super
simple art of Meringue Cookies a few years ago and have loved making them ever
since. They are adaptable to almost any
flavor and are always a big hit. I ran
across Shugary Sweets post about Red, White and Blue Meringues and realized I
had yet to make a Meringue Cookie for Cookie Time Tuesday. I loved how her recipe used Jello Powder to
flavor the cookies and knew I had to make it and share with you. I have an incredibly good Chocolate Meringue Cookie recipe that I'll share soon but in the meantime I highly recommend this
easy recipe. You could really use any flavor Jello that you like but I had these handy so that was the reason I chose the three that I did.

You will need:
4 egg whites, room temperature
1/2 Tbsp vinegar
1 Tbsp corn starch
1 cup sugar
1 ½ Tbsp Raspberry Jello mix (powder)
1 ½ Tbsp Berry Blue Jello mix (powder)
1/2 tsp lemon extract for white meringues OR
1 ½ Tbsp Lemon Jello mix for yellow meringues (powder)

• Gather ingredients
• If you don't have Caster Sugar process regular sugar in a food processor until fine
• Beat egg whites until fluffy
• Add vinegar and cornstarch
• Pour in your sugar slowly and beat until stiff peaks form
• Add your Jello powder and food coloring and combine well
• Drop cookies by spoonfuls onto parchment lined baking sheets
• Bake for 90 minutes on 200 degrees
• Once the 90 minutes is up leave in warm oven about 6 hours or overnight
• For the second batch I made I used food coloring gel for a bolder color since I wanted to have Patriotic Colors for the 4th of July
• This batch was done the exact same way as above but used the gel instead of regular food color drops
