Today is the first Cookie Time Tuesday and I'm very excited to share with you all!
My grandmother makes amazing Chocolate Chip Cookies and I think that is why I have such a love for making cookies frequently. I just love baking them and smelling the yummy scent throughout the house and of course eating a warm cookie is a little piece of heaven. In my house I can make lots of cookies but my husband and son still just want plain old Chocolate Chip.
For the first few weeks of Cookie Time Tuesday I am going to work my way through this Gooseberry Patch Chocolate Chip Cookie cookbook that I downloaded for free to my Kindle. You can get yours HERE. There are 25 recipes in the book so I will make something new every week.
Peanut Butter-Chocolate Oat Cookies
3/4 Cup Butter, softened (I used margarine)
1 Cup brown sugar, packed
1/2 Cup sugar
2 eggs
1/3 Cup creamy peanut butter
1/4 Cup water
1 tsp. vanilla extract
1 1/2 Cup all purpose flour
1/2 tsp. baking soda
2 Cups quick cooking oats, uncooked
1 Cup semi-sweet chocolate chips (I used milk chocolate chips)
In a medium bowl, blend together butter and sugars. Beat in eggs one at a time; stir in peanut butter, water and vanilla. In a seperate bowl, combine flour and baking soda; stir into butter mixture. Add remaining ingredients; mix well. Drop dough by teaspoonfuls onto ungreased baking sheets. Bake at 350 Degrees for 8 to 10 minutes until edges are lightly golden. Cool on wire racks. Makes about 3 dozen.
Mix butter and sugars.
Beat in your eggs one at a time
This is after the water, peanut butter, and vanilla is added.
It's a little "watery" looking but don't worry.
Add the 2 Cups of oats and mix well.
Add in your chocolate chips and stir to combine
You are ready to put them on the baking sheet now.
I use a Silpat mat for my cookies but you could use parchment paper
or just an ungreased cookie sheet.
You will be so happy with the end result when you use a Silpat mat or parchment paper.
They are delicious!
